Spinach and Mushroom Frittata
serves 4
Ingredients
- 2 C shitake mushrooms, sliced
- 2 C spinach, cooked, chopped
- 2 C smoked sausage, sliced, cooked
- 4 ea whole eggs, beaten
Instructions
- Saute the mushrooms in butter. Season to taste.
- MIx in the sausage and spinach and heat through.
- Mix in the eggs and let sit on the heat, stirring occassionaly until the eggs are cooked.
- Plate and serve.
